Those of us who regularly take in Chef Chad Scothorn’s specialties at the Cosmo in Telluride already know he’s capable of culinary brilliance. Thanks to a new culinary series at the famed Stanley Hotel in Estes Park, Colo., Scothorn will get to share his work in a new dining room on March 21 and 22.

Set within one of Colorado’s most iconic and historical sites and in the midst of one of the nation’s most scenic national parks, the Stanley Hotel’s Roads to Great Chefs series seeks to invite Chefs in Residence to put their skills to the test in an intimate restaurant setting. Read more

This dish was satisfying without being too filling, but our second entrée—the surf and turf—was the real showstopper. The grilled Kobe beef filet and butter-poached lobster tail were served over mushrooms, asparagus, and sour cream–mashed potatoes. As it happens, we’ve sampled similar entrées in the past few months at both Edge Restaurant & Bar and Ocean Prime, two of Denver’s high-end standbys. Cosmo’s dish transcended them both. I’ve never been much of a lobster fan—to which lobster enthusiasts always say, “You haven’t had it cooked right.” Well, now I have, and it was spectacular.
