2016 marked the 20-year anniversary
of The Cosmopolitan Restaurant.
The restaurant has the distinction of being the only sole proprietor of a fine dining restaurant in Telluride during its 20+ year run in Telluride.
The $4.2 million, 21-room luxury hotel Columbia, built by long-time locals, Jim Lincoln and Mary and Jeff Campbell, opened in 1996 along with the Cosmopolitan Restaurant. This was a winning combination from the start: Old-world charm, modern capacious grandeur, and a convenient location next to the free gondola.
In 1996, Colorado Expression Magazine wrote: If culinary excellence was measured on a Richter Scale, the food at the hotel would measure 9.8. The Cosmopolitan is a dream-come-true for foodies.
Ski Magazine had this to say in 1996: It’s homey and sophisticated on the first floor of the hotel, the food matches the standard set of the rooms. One reason is Chad Scothorn, who was the founding chef of the famous Beano’s Cabin in Beaver Creek…
Nationally recognized for his original approach to food preparation, Chef/Owner Chad Scothorn continues his quest for the ultimate indulgence for his patrons.
During the 20-year anniversary, diners were introduced to a new intimate lobby dining experience with cozy-comfy booths and soft lighting. Other new additions included the palate cleansing water by Nordaq FRESH and special anniversary menu items.
